I woke up really late this morning, but, never the less, here I am with my cup of coffee ready to share last night with you guys.
So, as you remember, I told you that I cook sort of like my mother (not as good) but, I don't really follow recipes but, I'll add the approx measurements for everything.
*Also, side note, if you can't find ground lamb in a grocery store, I usually get my meat from a butcher - If your butcher doesn't have it on hand, make sure you call him a day before you need the meat.*
Let's start with the lamb gyros. Here's what you'll need:
(For the marinade)
*1LB of ground lamb
*2 Tablespoons of cumin seeds
*1 small onion (grated)
*1 Tablespoon of red chili powder (Add more if you like your food spicy)
*2 Tablespoons of ground coriander
*1 Tablespoon of grated ginger
*1 Tablespoon of pomegranate seeds (whole)
*2 Tablespoons of fine wheat flour
*1 "Dash" of ground whole cinnamon
*1 Crushed bay leaf
*2 Tablespoons of extra virgin olive oil
*About 2-3 Tablespoons of cold water
*2 Tablespoons of yogurt
How to:
1. Add all the dry ingredients into a bowl and roughly mix together with a spoon or a fork
2. Take 1lb of ground lamb and mix well with the marinate mixture.
3. Add the olive oil and water to make sure everything will stick to the meat.
4. After everything is well mixed, add 2 tablespoons of yogurt. Mix well.
5. Cover and refrigerate either overnight or if you do it the same day, marinate for about 6-8 hours.
*When you're ready to cook the meat, take it out of the fridge*
What you'll need to cook:
*1/4 - 1/2 cup of flour
*Rolling pin
*1/4 cup of extra virgin olive oil
How To:
1. Add flour to the surface you will roll the meat on
2. Grab a small handful of meat, lightly coat the meat with flour.
3. Roll the meat with the rolling pin until how thick or thin you want it (the thinner the better)
4. Set aside.
5. Repeat with the rest of the meat.
Cooking:
1. Heat the 1/4 cup of oil in your pan
2. Add the meat and cook in your pan (About 4-6 min per side)
Now the tzatziki sauce!
What you'll need:
*2 Cups of Yogurt (Depends on how much you want to make)
*3/4 of a large cucumber finely grated
*1/2 Tablespoon of fresh lime juice
*2 Teaspoons of Salt
*2 Teaspoons of pepper
How to:
1. Add all the ingredients to a medium bowl
2. Mix until well blended.
3. Leave uncovered in the fridge until everything is ready to serve.
When everything is ready, grab some pocket pitas and slice them in half. Also, I like to slice some tomatoes, onions, and lettuce and add them to the gyro.

*Note: I got a call from a friend of mine after posting this - if you can't find pomegranate seeds or fresh seeds, you can use 1 teaspoon of pomegranate juice (Make sure it's 100% juice ie: POM)
